Winemaking 101: Punchdowns with Frank Cornelissen

Punchdowns are the process by which winemakers mix the grape skins with the fermenting juice. Frank Cornelissen likes to use a relatively small stainless steel paddle which he thinks is cleaner than using his feet and more effective. He calls this a “Burgundian Punchdown” and describes how the sensation gives him a guide to what is happening during fermentation.
