What does racking mean? What does fining mean? Winemaking terms defined.

After the fermentation of grape juice, a young wine is cloudy and full of sediment that includes tartrates, yeast cells and other byproducts of fermentation. Winemaker Marc Caparone of Caparone Winery explains what fining and racking mean, two process by which wines are separated from that sediment and made clear. Caparaone Winery is located in Paso Robles, California, and Marc sat down with Ask a Winemaker in the summer of 2013 at Red and White Wines in Chicago.
