More and more vintners are specialising in high-quality wines made from fruit and vegetables, thus meeting the tastes of discerning gourmets. They have thus started a new era of winemaking far away from grapes. One of them is Jens Skovgaard Pedersen. The Dane has founded the “Cold Hand Winery” and produces, among other things, cider and sparkling rhubarb wine north of the Danish city of Aarhus. Another connoisseur of gourmet fruit wines is Billy Wagner from the Michelin starred restaurant “Nobelhart & Schmutzig” in Berlin. At his restaurant he has 30 different fruit wines on his wine list at any time. For him fruit wines offer a variety of flavours, that traditional wines simply cannot provide.
