Trocken is the German word for dry and means that a wine has little or no residual sugar. The concept is explained by Dr. Franz Werner Michel of the Weingut Domdechant Werner in the Rhengau. Dr. Michel was the long time head of the German Wine Institute and his estae has been a member of the VDP for eighty years.
