Fermenting grapes in a Portuguese Lagar at Casa de Mouraz

A lagar is a traditional Portuguese tank carved our of granite and used for crushing and fermenting grapes into wine. Very few examples of wine made in a lagar exist and it is a rare treat to understand how it works.
