Why don’t you press your wine grapes right away after harvest?

Letting the grapes rest after harvest is an unexpected practice developed by Frank Cornelissen at his winery on Mount Etna. He feels that letting the grapes sit instead of pressing them right away allows for fermentation to begin and proceed more precisely.
